ANZAC cookies
Ingredients
- 1.5 cups flour
- 1 cup sugar
- 1.5 cups rolled oats
- 1.5 sweetened coconut(shredded or flaked)
- 10 tablespoons butter
- 4 tablespoons boiling water
- 2 tablespoons corn syrup
- 1 teaspoon baking soda
Steps
- Preheat oven to 350F
- Boil a cup of water
- Combine flour, sugar, oats, and coconut flakes in a bowl
- In a medium saucepan, melt butter and corn syrup together
- Once the butter is melted, mix the 4 tablespoons of boilding water with the baking soda in a small bowel, then add to the melted butter
- The butter mixture will foam up, then mix it with the dry ingredients
- Once mixed, add dollops of mixture to a baking sheet
- Bake for 8-12 minutes, or until golden brown
- Allow for biscuits to cool on tray for a couple minutes, then move to cooling rack
