Pasta Cacio e Pepe

  1. Boil water a cook pasta.
  2. In a pan, melt butter and then toast pepper.
  3. When there are 3 minutes left before the pasta will be done, transfer 1/2 cup of pasta water to the pan and let reduce.
  4. Take the pasta out with 1 minute left before normal cooking time and add to pan. Let some water come with it.
  5. Off heat, add the cheese to the pan with the pasta, stir until it comes together.
  6. If the cheese is clumping up, add more pasta water.
