Pasta Cacio e Pepe
Ingredients
- Pasta
- 1.5 oz percorino romana cheese
- Black Pepper
- 2 Tablespoons butter
Steps
- Boil water a cook pasta.
- In a pan, melt butter and then toast pepper.
- When there are 3 minutes left before the pasta will be done, transfer 1/2 cup of pasta water to the pan and let reduce.
- Take the pasta out with 1 minute left before normal cooking time and add to pan. Let some water come with it.
- Off heat, add the cheese to the pan with the pasta, stir until it comes together.
- If the cheese is clumping up, add more pasta water.
