Pavlova Cake

  1. Preheat oven to 350F
  2. Using mixer, mix egg whites and sugar for 10-15 minutes or until thick and glossy.
  3. Mix vinegar, vanilla, and cornflour together.
  4. Add to egg white mixture and continue to beat for another 5 minutes.
  5. Line oven tray with baking paper.
  6. Spread mixture evenly on tray in a circle, keeping at least 1 inch away from the edges.
  7. Place tray in preheated oven, then turn oven down to 210F. Bake for 1 hour.
  8. Turn oven off, crack oven door open, leave until cool.
  9. Move to serving plate, decorate with whipped cream and fresh fruit.
